not sure if you wanted crispy or chewy... i'll go with the latter. if you do want crispy cookies you can always pull the pan out of the oven 1.2 way through the baking process slap the pan on your counter (to knock out excess air) and continue to bake.
and dont overbake people! 20% of the baking process is done AFTER it comes out of the oven... when it looks almost done (golden edges, soft center) TAKE IT OUT!:wallbang
(NOTE: for extra chewy cookies, melt the butter and mix it with the sugars, or you can even grind up half, or all of the oatmeal in a food processor)
OATMEAL COOKIES
1 c. (4.75 oz) unbleached all-purpose flour
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
8T (1 stick/4 oz.) unsalted butter, at room temperature
1/2 c. (3.5 oz) lightly packed light brown sugar
1/2 T. ground cinnamon
1/2 c. (3.5 oz) granulated sugar
1 egg (Large)
1/4 c. (2 oz) maple syrup (optional)
1/2 t. vanilla extract
2 1/4 c (6.5 oz) rolled (old-fashioned) oats
optional additions...
3/4 c. semisweet chocolate chips
1/2 c. coarsely chopped pecans or walnuts (toasted)
3/4c. raisins, currants, dried cranberries (plump in warm water for 10 min. and drain)
Preheat oven to 350 ( 325 low fan for convection ovens)
Combine flour, salt, baking powder and baking soda in a bowl. Set aside.
In a standard mixer cream together butter, sugars and cinnamon (if using) until pale yellow and fluffy. If using melted butter, just mix thoroughly with a wooden spoon.
Add egg, mix to combine and drizzle in maple syrup and vanilla extract.
Stir in flour. Next add oatmeal and optional ingredients.
Scoop cookies about 1 Tablespoon each on to a greased cookie sheet and bake until golden brown on the edges and have a slightly soft interior. Cool cookies on pans about 5 minutes.

You don't have to bake all the cookies right away. Feel free to freeze the cookie dough (just roll the dough into a 1.5" log, wrap in wax/parchment paper, and wrap in foil.)... Just like the supermarket crap. When you feel like a cookie, or two or ten... just slice.. and add an extra minute or two to the baking time.

THE BEST THING I EVER ADDED TO THESE WERE CINAMON CHIPS..OMG!!!!
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
optional..raisins, choc chips, nuts
DIRECTIONS
In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
Preheat the oven to 375 degrees F.Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes
