we had prime rib on Christmas :spitfall
We had simple sides though...
Broccoli Rabe , Suateed mushrooms and roasted potatoes (seasoned with salt, pepper and fresh rosemary). The potatoes were small and we cut them in half. I don't remember what kind they were, but some of the potatoes were red, dark purple, white....

TWICE BAKED NEW POTATOES
ive served these as an app..but they work great as a side too
1 1/2 pounds small red potatoes
2 tablespoons vegetable oil
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1 package cream cheese, softened
1/3 cup minced green onions
1 teaspoon dried basil
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 pound sliced bacon, cooked and crumbled
stab potatoes; rub skins with oil. Place in a baking pan. Bake, uncovered, at 400 degrees for 50 minutes or until tender. Allow to cool to the touch. In a mixing bowl, combine Monterey Jack, sour cream, cream cheese, onions, basil, garlic, salt and pepper. Cut potatoes in half; carefully scoop out pulp, leaving a thing shell. Add pulp to the cheese mixture and mash; stir in bacon. Stuff potato shells. Broil for 7-8 minutes or until heated through.

So did we! :heart
We had twice baked potatoes, salad, and corn on the side.
A good side dish would be something with sweet potatoes...maybe homemade sweet potato fries :spitfall

Garlic Peas.
INGREDIENTS:
1 pkg. Frozen Peas (defrosted)
Lots of fresh garlic diced (to taste!)
5 Tbs of Virgin Italian Olive Oil (to taste, rarely measured)
Dash of Salt and Pepper
Abundant amounts of Fresh Basil
--------------------------------------------------------------------------------
DIRECTIONS:
First step is to cook the peas so that they are tender but not mushy. Drain all the water off when finished cooking. In a large skillet, just WARM the olive oil for a brief moment. (Don't alter or lose the tast of the oil). For those faint of heart the warming can be omitted. Turn off the flame. Dump in the cooked peas, diced garlic and shredded basil.

I can't eat broccoli rabe unless it's boiled a little bit first. It's way too bitter for me otherwise...

I'm gonna call my mom just to confirm this...
in a medium sauce pan, add some olive oil & chopped garlic . Cook for a few minutes and add broccoli rabe & salt and cover. I'm not sure how long she cooks it for and I feel like i'm missing an ingredient.

I always make the double baked potatoes, they're a hit!
Why not buy some shrimp and fry them up, but fry them in flour instead of bread crumbs? SO good.
Stuffed mushrooms.

i make these from time to time (i eyeball all ingredients)
honey-ginger glazed carrots (for presentation purposes you should use the stems but for plate purposes i would use baby carrots)
boil carrots till soft 2-3 cups worth(throw some salt in the water)
heat up a little oil and throw about a teaspoon of minced ginger in it.(cook a little)
add 6-10 tablespoons of honey
add about 2 tablespoons of butter or margarine
reduce that till its thick
right before you throw the carrots in add some chopped parsley and red pepper(not alot of red pepper)
for color really
(red pepper is optional but i like the extra kick)
than toss boiled carrots in the glaze and serve :agree
