I have one- ive made it before and it was very good.
4 eggs
2 cups sugar (I used baking splenda and it actaully came out good)
1 1/3 cups oil (vegetable)
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons ground cinnamon
3 to 4 cups grated carrots
3/4 cup chopped pecans
Preheat oven to 325 degrees. Combine sugar and eggs and beat well. Sift flour, salt, baking soda, baking powder and cinnamon together. Add to sugar mixture a little at a time and alternately with oil. Add carrots and nuts. Bake in 3 (8 inch) greased and flour, layer cake pans. (I think i just used one pan for one big cake- i cant remember)
Bake for 45 minutes. Remove from oven to cool and frost with cream cheese icing.
Beat butter and cream cheese. Add powdered sugar and vanilla and beat to mix well. Spread over 3 layers, top and sides of cooled cake.
top with nuts (optional)
