View Full Version : Spinach Souffle Stuffed Mushrooms

1 package (10 oz) fresh chopped spinach, thawed and squeezed dry
1/2 lb Havarti Cheese chopped in 1/2in cubes
1/2 cup fresh grated parmesean cheese
3 eggs
2 tablespoons milk
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon ground nutmeg
2 pounds medium size white mushrooms (clean and stem)
1/2 teaspoon salt

Preheat oven to 375.
Put cheeses, spinach, garlic powder, oregano, pepper and nutmeg into a processer and pulse until finely chopped
Place mushroom caps on large baking pan and coat mushrooms with cooking spray or brush with melted butter
Fill each cap with a level tablespoon of spinach mixture
Bake at 375 until mushrooms tender and filling sets
