View Full Version : Menu I designed to cook over Thanksgiving break

This is a rough draft. I might make some changes in the next month. But this is basic idea I am going with. What does everyone think????

The Accents Of Autumn

First Course – Roasted Pumpkin & Apple Soup topped with Crème Fraiche

Second Course – Arugula & Mixed Greens Salad, with Apple Smoked Cheddar, Sliced Apple, Candied Pecans, and Apple Cider Vinaigrette

Third Course – Prosciutto Wrapped Striped Bass, with Edamame Puree, Sauteed Shiitake Mushroom, Cilantro Oil and Fresh Mache.

Fourth Course – Peppercorn & Garlic Crusted Medallions of Tenderloin, with Horseradish Mashed Potatoes, Sauteed Spinach and Mushrooms, Carrot Puree and Cabernet Sauce

Fifth Course – Pumpkin Crème Brulee with Apple Ice Cream, Cinnamon Whipped Cream and Candied Pecans

Yea, I already have my Culinary Arts degree from the Culinary Institute of America, and i am still here finishing my BPS, will be done in Feb and then looking for a job in the city.

That is a GREAT menu..and nothing too "strange" on it..dessert is bangin

Upstate NY, Hyde Park, I am less than a mile from Marist College, if you know that school. Vassar is also pretty close. website is www.ciachef.edu

this is my school, used to be a Jesuit Monistery(However you spell it)

Also if you ever have a chance to get up here, Train from Grand Central comes right up here, there are 4 great Restaurants on Campus. St. Andrews Cafe (More Healthy eating and Modern Asian/American/French Fusion), Caterina or Colavita Center,(new building dedicated to Italian food and wine, place is amazing), Escoffier(Classic French, which is one of the two premier restaurants), and American Bounty(Contemporary American) the last two are hard to get reservations at usually have to call a few months in advance. Just some info if anyone is interested.

I have been trying to tell you. If I cook for you before Christmas this will be the menu. Otherwise I will be creating a new one for the season............;)

I spent a wopping total of $107,000 on my total education.:(
Cooking part was about 50,000. I can cook:D

I don't have one specific thing that I like to make. I am pretty open to all cuisines. I like making up a menu and kind of have a theme, like this one is a fall theme. How about all you girls get together and I will cook for you all.................:D

How did that come out? You ever try that Apple Ice Cream Edys put out. I wish i could make my own ice cream for this menu but don't have the availability of the machine to make it. :(

yeah ice cream machines are damm expensive

but the ice cream was awsome i'll post the recipe lata ;)
