I like most dishes with artichokes and them in general but have you ever worked with them. Pain in the ass. To take them apart and you have to where gloves otherwise the bitterness of them will soak into your hands..............plus you need lots of lemon on them so they don't oxidize.

I make them every couple of months...I kinda got the ritual down pat - sometimes my only problem is when i cut that stem on the bottom, i sut it uneven and when i put it in the pot to cook they fall over, :( (only sometimes, lol)

First off make sure you are cooking them in a water with an acid in it like Wine or lemon juice, or vinegar. Keeps there color and flavor. Also put some milk in the water and herbs like thyme and parsley. When you cook them they should already be peeled so jsut the choke is cooking. Put a cloth over the top of them so they are not in direct contact with the air which oxidizes them.......Cook until tender and there you go..........

Just put about a cup of wine and the juice of one lemon in a mid size pot to a large size. And the cloth should be real thin and it goes in the pot right on the water so it kind of covers everything, nothing hanging over the edge that can catch fire.:D
