Puree Of Split Pea

Yield 1 Gallon

Bacon, chopped fine - 6 slices
Veg oil - 2 fl/oz
Onions, chopped - 12 oz
Celery, chopped - 4 oz
Garlic, crushed - 1 Tbsp
Chicken Stock - 1 gal
Potatoes, large dice - 1 lb
Green split peas - 1 1/2 lbs
Smoked ham hocks - 1 lb
Bay leaves - 2 each
Salt, to taste
Whole Black Peppercorns - 1/2 tsp

METHOD:

1. Render the bacon in oil
2. Add the onions & celery and saute until the onions become transparent
3. Add the garlic and saute until an aroma develops, do not brown.
4. Add the stock, potatoes, split peas, ham hocks, and bay leaves and bring to a simmer. Allow the soup to simmer for 1 1/2 hours or until the peas are very tender.
5. Remove the ham hocks and bay leaves.
6. Puree the soup until smooth. Adjust consistency with additional stock if necessary.
7. Dice the lean meat from the ham hock and return it to the soup.
8. Bring the soup back to a boil. Adjust the seasoning with salt and pepper to taste.

This is the best split pea I have ever had...........

Salt is good to a certain extent. And if you don't like the ham you can use bacon..............:D

dont like bacon either lol i think im the only person alive who doesnt :silly

Yea bacon is one of those things that I can start eating and never stop, I love me some bacon.........:)
