South Beach/Atkins Friendly Mock Mashed Potatoes

1 cup steamed cauliflower
1 teaspoon I cant Believe its not butter
Salt and Pepper to taste

Blend in food processor until smooth. Absolutely delish~! I made it last night, and even my boyfriend LOVED it.

Its SUPPOSED to be a substitute for mashed potatoes. I should have put MOCK mashed potatoes, just to make you happy my sweet baboo....:ROTFL

Its Puree of Cauliflower, this used to be really popular on upscale menus back in the day. You don't really see it anymore. It is good though, but I wouldn't call it Mashed Potatoes if it doesn't contain potatoes. Add some cheese into that recipe, makes it even better.;)

im a BIG fan of potatoes and REAL butter...

I had REAL MASHED POTATOES last week and used half a stick of land o' lakes salted butter in my serving :spitfall

i still :heart ya tho :chuckle

Sounds delish. I remember the days of real mashed potatoes. Ahh, put a lil roasted garlic in em next time...YUM!

By the way: Land o' Lakes Butter is the bestest.

No I am know unsalted butter is really butter but to a butter person like me who eats it straight from the stick all butter MUST be salted.
