For a quick, easy and delicious appetizer here is what I made on Saturday night. :applaud
4 portobello mushrooms (medium size) hollowed out
Some ground up chicken (like ground beef, only chicken)
"Italian" spices (easy to find in the supermarket)
mushroom "innards" :keke
Breadcrumbs
parmesan cheese
tomatoe sauce
Fresh Mozzarella
Egg
I don't really have measurements because I just did everything by eye, but it was EASY to make and determine how much of everything to put in).
I took the ground up chicken and mixed it together with some of the mushroom innards (the middle part that I dug out), some breadcrumbs, LOTS of parmesan and then a little bit of egg (the kind that come in a carton--just a quick pour). I mixed it all up together and then stuffed the mushrooms with it. Then I poured on some sauce (to cover the entire top) and then layered slices of fresh mozzarella on top.
Stuck it in the oven for about 20 minutes and VOILA--delicious, fast and fattening.

Sounds good you forgot one key ingredient when stuffing with breadcrumbs. LOTS of fresh GARLIC!

K FOUND IT!
London Broil with Marsala Sauce
(the london broil I usually get is around 2lbs.)
Marinade:
-1 cup teriyaki sauce
-1 cup pibeapple juice
-1/2 cup cooking oil
-1/2 cup chopped onion
-1 tablespoon minced garlic
-1 1/2 teaspoon dried rosemary, crushed.
(I also used non flavored meat tenderizer, with no msg...just to make the meat a little softer)
Marsala Sauce:
-1 cup mushrooms
-1 tablespoon onion
-1/2 teaspoon garlic
-1 teaspoon olive oil
- 1/2 cup Marsala Wine (I use Holland House)
-1 cup Beef Broth
-1/4 cup Tomato Puree
(I usually double this to make extra sauce)
Score your steak by making shallow cuts diagonally in meat, both sides. Place meat in a bag and into a shallow dish.
In bowl, combine ALL marinade ingredients...pour over meat. Seal bag- Let marinate for a couple of hours. Turn bag occasionally. --I let it marinate all day...it's up to you, obviously it will have more flavor if you leave it longer.
Remove meat from marinade and disreguard left over juices.
You can either broil your meat or grill it. (I grilled it) Cook for about 6 or 7 Mins each side...be careful...it gets tough very easily!
For the Marsala Sauce just add oil into a pan, add the onion and garlic first...cook for 1-2 mins until onions are clear. Then add Marsala wine, beef broth, tomato puree and mushrooms...cover and let cook until mushrooms are soft and brown. Sauce will reduce to about half and thicken a little bit.
Top meat with your Marsala sauce.
