Bittersweet Chocolate Ice Cream
using a microwave eliminates guessing about whether its thick enough or stirred enough. the buttermilk just heightens the chocolate flavor and this is the perfect recipe for ppl that have never made ice cream before.
4 extra large egg yolks
3/4 c. sugar
1 c. milk
1 c. heavy cream
7 ounces of quality bittersweet chocolate, chopped into teeny pieces
(note: you can use semisweet BAKERS chocolate NEVER "chips")
3/4 c. buttermilk
1. Using an electric mixer, creameggs and sugar until the mixture is light aand fluffy.
2. combine the milk and creamin a 2 qt. casserole dish and cook for 2 minutes on high power (700 watts) uncovered
3. With the mixer running, slowly add the hot milk/cream and blend till smooth.
4.Transfer mixture back to the casserole dish and return to microwave for 3 minutes. after each minute, whisk mixture, until it coats the back of a spoon.
5. Remove and add chocolate stirring till it is completely combined. Then whisk in buttermilk.
6.Let it cool to room temp and put it in the refridgerator for about three hours...(go lay out in the sun, paint your nails, watch a movie.......)
7. Transfer to an ice cream maker and follow directions. Approx. 15 min and you'll have deliscious choc. ice cream
