    pecan crusted chicken w strawberry spinach

    Making this now. Its a quick and easy dinner. Ill post some pics after its done.
    Recipe
    1 cup pecans, toasted 1/2 cup bread crumbs 1 teaspoon dried basil 4 skinless, boneless chicken breasts
    1/4 cup honey mustard
    oven to 400°
    grind the pecans into fine crumbs. Transfer to a wide, shallow bowl and stir in the bread crumbs and basil. Season with salt and pepper. Rub each chicken breast with honey mustard, then coat with the pecan mixture. Place on a nonstick baking sheet and drizzle with 2 tablespoons olive oil. Bake until the juices run clear, 15 to 20 minutes.

    It's nothing fancy at all. I just toast some pecans, saute some spinach and strawberry slices-throw it all together and squeeze a half of lemon on it.
    Its all cooking now, Illpost pics in a few. It is not the BEST dinner, but it is good and it is quick and easy.(and fairly healthy)

    my wife makes spinach/strawberry salads all thetime, she loves them

    looks great
